Quinoa Black Bean Salad
(4 portions)

Quinoa is a grain that is high in protein. This dish could be used as an appetizer or main course with a side green salad. It has a Mexican taste so would be good in a taco shell or a wrap.

1/3 c. quinoa
1 c. water
1 tsp. olive oil
4 tsp. fresh lime juice, or more to taste
1/4 tsp. cumin
1/4 tsp. coriander
1 Tbsp. cilantro, chopped
2 Tbsp. minced scallions (or shallots)
1 1/2 c. cooked black beans (about 15 oz can, drained)
2 c. diced tomatoes
1 c. diced peppers (mixture if you can)
2 tsp. minced fresh green chiles (canned is okay as an alternative)
salt and pepper to taste

  1. Rinse quinoa. In a sauce pan, bring water to boil and add quinoa, cover, cook for 10-15 min. till all water is absorbed. Allow to cool 15 min.
  2. Combine remaining ingredients. Add cooled quinoa na dajust seasoning.
  3. Refrigerate until read to serve.
  4. Serve garnish with lemon or lime wedges
