Asian-Style Meat Loaf

This recipe comes from the Chicken For Dinner magazine, best of Cooking Light.

1 (3 1/2 oz) package plain rice crackers (such as KA-ME)
1 lb ground chicken breast (don't use turkey)
1/2 lb lean ground pork
1 c chopped green onions
1/2 c Hoisin sauce, divided
1/2 c chopped red bell pepper
1/2 c drained chopped canned water chestnuts
1 Tbsp low-sodium soy sauce
1 Tbsp grated fresh ginger
1/2 tsp salt
3 garlic cloves, minced
2 large eggs
Cooking Spray

  1. Preheat oven to 350 deg F
  2. Place crackers in a food processor; process until finely chopped.
  3. combine cracker crumbs, chicken, pork, green onions, 1/4 c Hoisin, and the remaining ingredients except cooking spray in a large bowl.
  4. Shape chicken mixture into 6 loaves on a broiler pan coated with cooking spray; spread 2 tsp. Hoisin over top of each loaf.
  5. Bake at 350 deg F for 45 minutes or until a thermometer registers 165 deg F. Let stand 5 minutes.
